Baku Bangers

This is a Scottish version of the dish most popular in the North of England and over the border in Scotland. A wonderful lightly spiced mixture of cooked blood, oatmeal and fat which may be enjoyed as part of a hearty cooked breakfast.

Known colloquially as 'square sausage' or 'slice', Lorne Sausage is made by forming sausagemeat into a 'brick' and slicing it to form square meat patties. Lorne Sausage can be made from pork or beef or both. The Baku Bangers version is adapted from a traditional recipe and uses equal proportions of pork and beef seasoned with a melange of spice including coriander and nutmeg.
